GRILLED STEAK SALAD WITH PINEAPPLE
2 large steaks (2 x ½ lb)
4 slices of pineapple, chopped
8 curly lettuce leaves, finely chopped
4 stems of cilantro, chopped
1 Pickerfresh roasted red pepper, julienned
8 slices of Pickerfresh sliced banana pepper
1 small red onion, cut into half-moons
1 avocado, sliced
2 tsp of honey
Juice of 1 lime
2 tablespoons of sesame oil
Salt, freshly ground black pepper
Brush olive oil on both sides of the steaks, sprinkle salt and black pepper to taste. Put the steaks on a hot grill and cook each side for about 4 minutes. Remove from grill, let rest for 5 minutes, then slice.
Transfer lime juice, honey, sesame oil and a pinch of salt to a small jar and close the lid. Shake until mixed.
Transfer the lettuce, pineapple, cilantro, red onion, roasted red pepper, pickled banana pepper and avocado to a mixing bowl. Drizzle with the sauce and blend. Transfer to service plates and top with sliced steak. Serve immediately.
