TACOS

Ingredients
8 taco shells
½ lb of ground beef
1 small onion, finely chopped
1 clove of garlic, finely chopped

2 tablespoons of Pickerfresh Pickled Jalapenos

1 Pickerfresh Roasted Red Pepper, finely diced
2 tablespoons of red kidney beans
2 tablespoons of corn kernels
¼ cup of cheddar, finely grated
1 teaspoon of chili powder
½ teaspoon of cumin powder
3 chives, finely chopped
Olive oil
Salt and black pepper
Salsa
1 avocado, sliced
1 lime, sliced
To serve
Directions
Heat 3 tablespoons of olive oil in a pan. Add the ground beef and stir for a few minutes. Add the onion, garlic, chili powder, cumin powder, salt and black pepper and blend. Cook until the onion turns slightly brown and add the red kidney beans, corn kernels and roasted pepper. Gently blend again and remove from heat.
Fill taco shells with this mixture. Top with cheddar and 2 or 3 slices of pickled jalapeno. Sprinkle with chives and serve with salsa, avocado and lime.
