PICKLED BEET HUMMUS

Ingredients
1 cup of cooked chickpeas

3/4 cup of Pickerfresh pickled beets
1 clove of garlic
4 tablespoons of tahini

6 Pickerfresh kosher petite dills, sliced

1 tablespoon of Pickerfresh jalapeno
Roasted pine nuts
Peppermint leaves
Olive oil
Salt, cumin powder
Directions
Transfer chickpeas, pickled beets, garlic, tahini, a pinch of salt and cumin powder to a processor and blend until smooth. Transfer to a service plate and drizzle olive oil on top. Top with kosher petite dills, jalapeno, roasted pine nuts and peppermint leaves. Serve immediately.
